With my organic vegetable delivery order, I received a giant fennel and had no clue what to do with it. After doing some research, I created this delicious recipe that I have made over and over again. Fennel has a slight licorice taste and pairs very well with apple.
The health benefits of fennel include: improving and preventing anemia, treating indigestion, alleviating flatulence, relieving constipation and diarrhea, improving brain function, improving edema, regulating menstruation, and protecting the eyes.
Even if you don't like the flavor of licorice, you will love this refreshing salad! The combination of flavors is really delicious.
1 Fresh fennel
2 granny smith apples (or apples of your choice)
1 blood orange (or navel orange), juiced
1 lemon, juiced
1/3 cup walnuts, chopped
2 TBSP Bragg's organic apple cider vinegar
2 tsp Dijon mustard
2 tsp organic raw honey
Himalayan salt & pepper to taste
Chop the top off of the fennel and set aside. Cut the bulb (base) of the fennel into large pieces, cutting off the base. Cut apples, removing seeds, core and stem.
Add fennel and apples to food processor for a few seconds to chop into small pieces.
In a small bowl, combine the juice of the orange & lemon, dijon mustard, honey, apple cider vinegar, salt and pepper. Whisk to combine ingredients.
Pour mixture over apple and fennel. Add chopped walnuts and stir. Pick off top green parts of fennel to garnish.
Refrigerate for 1 hour and serve. This recipe is an excellent side dish to any meal.
