Ingredients:
2 ripe avocados
1 bag of frozen shrimp, thawed, deveined, with tails removed, torn into thirds
1 ripe mango, peeled and diced
3 limes
1/4 tsp cumin powder
1/2 cup coconut cream
1 small jalepeno pepper, chopped with seeds removed
fresh cilantro
fresh mint
1 TBSP extra virgin olive oil
sea salt, to taste
black pepper, to taste
Directions:
Scoop out the insides of 2 avocados and put in a blender.
Add in the coconut cream, juice of one lime, 1/4 tsp of cumin and a dash of sea salt and pepper. Blend until smooth.
Add the avocado whip to a bowl.
To make the salsa, combine the shrimp, mango, cilantro, mint, and jalepeno pepper.
Squeeze the juice of 2 limes over all the ingredients and drizzle 1 TBSP of extra virgin olive oil.
Finish with salt and pepper and mix to combine.
Top the avocado whip with the mango shrimp salsa and serve.
