Beautiful Breakfast Tostada

Want a healthy, beauty-enhancing egg breakfast that is high in protein and full of flavor? Look no further! This recipe is loaded with beautiful and delicious skin enhancing ingredients. Lutein and zeaxanthin-rich eggs and skin-loving avocados help to improve skin hydration, elasticity and firmness. Tomatoes improve skin collagen and prevent sagging, and their antioxidants help to reduce fine lines. Bell peppers are rich in vitamin C and help stimulate and build collagen, as well as promote skin cell turnover, reduce wrinkles and prevent sun damage. This quick and easy breakfast tostada contains a pretty 22 grams of protein, and putting a healthy spin on this crispy flat taco made it gluten-free, dairy-free, corn-free, and vegetarian-friendly!


  • 1 almond flour tortilla (Siete brand)

  • 1 organic, pasture-raised egg

  • 1/2 cup organic liquid egg whites

  • 1/4 cup diced bell peppers (any two colors)

  • 1/4 cup organic salsa

  • 1 single serving of guacamole or avocado mash

  • avocado oil spray (Primal Kitchen brand)

  • 1/8 tsp onion powder

  • 1/8 tsp garlic powder

  • 1/8 tsp chili powder

  • himalayan salt

  • black pepper


Heat almond flour tortilla in a small frying pan over high heat for 30-60 seconds each side, until slightly brown and crispy. Plate the tortilla and spread gucamole and half the salsa on top. Spray pan with avocado oil and saute bell peppers on medium-high heat until slightly browned. Remove from heat and add whole egg and egg whites. Sprinkle with salt, pepper, onion powder, garlic powder and chili powder. Return to medium heat and scramble until eggs are cooked through. Add scrambled eggs on top of the tortilla and top with a little salsa.
