If you've ever tried to give up bread, you know it can be one of the hardest foods to replace.
Whether you're avoiding gluten, looking for a lower-carbohydrate option, or simply trying to increase your protein intake, cloud bread offers a simple alternative that comes together with just a handful of ingredients.
Light, airy, and surprisingly versatile, cloud bread can be used for sandwiches, breakfast, snacks, or even as a base for mini pizzas.

What Is Cloud Bread?
Cloud bread is a soft, fluffy bread alternative made primarily from eggs and a creamy ingredient such as cottage cheese, cream cheese, or Greek yogurt.
Unlike traditional bread, it contains no flour and is naturally gluten-free.
The result is a light, pillowy texture that works well when you're craving bread but want a higher-protein option.

Ingredients:
3 eggs, separated
2 oz. organic cream cheese, softened
1/4 tsp cream of tartar
1 packet of stevia (optional)
Optional:
Garlic powder
Everything bagel seasoning
Italian seasoning
Directions:
Preheat the oven to 350 degrees. Cover a baking sheet in parchment paper.
In a big bowl, combine egg whites and cream of tartar.
Use an electric mixer for a couple minutes to mix the ingredients together until stiff peaks form.
Combine the egg yolks, softened cream cheese and stevia (optional) together in a smaller bowl and whisk until the cream cheese is smooth and no longer visible.
Add the egg and cream cheese mixture into the egg white mixture by gently folding the ingredients, while not deflating the egg whites.
Gently scoop the mixture onto a cookie sheet with a spatula, dividing it into 5 or 6 rounds.
Bake for 25-30 minutes at 350 degrees until cloud bread is lightly browned. Let cool for a few minutes, add your favorite spread and enjoy this 19-calorie no-carb bread!
Makes approximately 6 pieces.
Ways to Enjoy Cloud Bread
Cloud bread can be used in many different ways:
Breakfast sandwiches
Mini burger buns
Turkey or chicken sandwiches
Avocado toast alternative
Pizza base
Nut butter snack
Because it has a mild flavor, it works well with both sweet and savory toppings.
A Better Choice for Blood Sugar Balance?
One of the biggest challenges I see with many gluten-free products is that they are often highly processed and loaded with refined starches.
While cloud bread isn't meant to replace every source of carbohydrates, it can be a useful option when you're looking for a higher-protein alternative that may have less impact on blood sugar compared to traditional bread products.
Pairing protein-rich foods with healthy fats and fiber can help support more stable energy levels and keep you feeling satisfied longer.
Tips for Success
The key to fluffy cloud bread is properly beating the egg whites.
You'll know they're ready when stiff peaks form and the mixture holds its shape when the beaters are lifted.
Also be sure to fold gently when combining the mixtures. Overmixing can cause the bread to lose its signature airy texture.
Worth a Try
If you're looking for a simple gluten-free bread alternative, cloud bread is a fun recipe to keep in your rotation.
It's easy to make, versatile, and a great way to add more protein to your meals without relying on processed specialty products.
