Grilled Cilantro Lime Chicken Thighs

Two of my favorite ingredients - cilantro and lime - make this my new favorite way to eat chicken. As you know by now, I love flavorful food and this recipe certainly falls into that category with its smoky and zesty flavors! Simple marinade this chicken for 2-24 hours and use the Foreman grill for a quick cook time. I recently paired this recipe with my delicious roasted rainbow of vegetables to put together my meal prep for the week. (While the veggies are in the oven, you can grill the chicken to save on time!)

Ingredients:

  • 2 lbs boneless, skinless chicken thighs (organic or Publix Greenwise)

  • 2 TBSP avocado oil

  • Zest of 2 limes

  • 2 TBSP fresh lime juice

  • 1/4 cup fresh cilantro, chopped

  • 2 tsp smoked paprika

  • 2 tsp cumin

  • 1 tsp himalayan salt

  • 1 tsp fine black pepper

Directions:

1) Mix together avocado oil, lime zest, lime juice, cilantro, and spices in a medium-sized bowl.


2) Add chicken thighs and mix well to coat in marinade. Cover the bowl and refrigerate 2-24 hours.


3) Turn on the Foreman grill, and once hot, add marinated chicken. Grill chicken for 6 minutes. Repeat until all chicken is grilled. Pair with you favorite vegetables and enjoy the wonderful flavors!
