Roasted Italian Romanesco

Before I tell you how to make this wonderful recipe, you might be wondering what exactly romanesco is. Romanesco is a cruciferous vegetable that seems like a hybrid between cauliflower and broccoli, yet it is its own unique vegetable. In fact, it is probably the most beautiful vegetable you will ever see, with its ornate spiral patterns and vibrant green color. It tastes similar to cauliflower and it can be eaten cooked or raw. In this recipe we jazz it up with the wonderful flavors of Italian seasoning, parmesean cheese, lemon zest and fresh garlic. With few ingredients and easy cooking, it is a fool-proof, easy recipe, perfect to add as a side dish to any meal.


  • 1 Romanesco, cut into florets with stems removed

  • 3 cloves garlic, minced

  • 1 lemon, zested

  • 1 TBSP avocado oil

  • 1 TBSP parmesean cheese or nutritional yeast (if dairy-free)

  • 1 tsp Italian seasoning

  • 1/2 tsp himalayan or sea salt

  • 1/2 tsp black pepper


Preheat oven to 425 degrees and line a baking sheet with parchment paper. Add all ingredients into a bowl and mix with a spatula to combine.

Spread the romanesco onto the baking sheet and bake for 20 minutes.
