Sometimes the simplest recipes become the ones you make over and over again.

This creamy cucumber salad, known as Mizeria, is a traditional Polish dish that's light, refreshing, and incredibly easy to prepare. Made with crisp cucumbers, fresh dill, and a creamy dressing, it's the perfect side dish for grilled chicken, fish, burgers, or your favorite summer meal.

While I love this recipe because it's delicious, I also appreciate that cucumbers and fresh herbs provide nutrients that support hydration and overall wellness. It's a simple reminder that healthy eating doesn't have to be complicated.

Why You'll Love This Recipe

One of my favorite things about Mizeria is that it comes together in just a few minutes and pairs beautifully with almost any meal.

This salad is:

  • Naturally gluten-free

  • Refreshing and hydrating

  • Rich in fresh herbs

  • Perfect for warm weather

  • Easy to prepare ahead of time

  • A great addition to barbecues, picnics, or weeknight dinners

The Health Benefits of Cucumbers

Cucumbers are made up of more than 95% water, making them one of the most hydrating vegetables you can eat. They're also a good source of vitamin K and contain antioxidants that help protect your cells from oxidative stress. While cucumbers aren't considered a medicinal food in traditional Chinese medicine, they're a wonderful addition to a balanced diet—especially during the warmer months when many people naturally crave lighter meals.

Fresh dill adds bright flavor while providing additional antioxidants and nutrients, making this salad as nourishing as it is refreshing.

A Few Simple Tips

To keep your cucumber salad creamy instead of watery, lightly salt the sliced cucumbers and let them sit for about 20–30 minutes before mixing them with the dressing. This helps draw out excess moisture so the dressing clings beautifully to every bite.

I also recommend serving this salad chilled. The flavors become even better after spending a little time in the refrigerator.

Ingredients:

  • 6 small or 4 large cucumbers, peeled and thinly sliced

  • 1/4 white or yellow onion, thinly sliced

  • 1 cup organic greek yogurt

  • 4 TBSP raw apple cider vinegar

  • 1 TBSP organic honey

  • 1/4 cup chopped chives

  • 2 TBSP fresh dill

  • 1/2 tsp sea salt salt

  • 1/4 tsp black pepper

Directions:

  1. Thinly slice cucumbers and onion.

  2. Place sliced cucumbers on a paper towel and sprinkle salt to absorb excess moisture.

  3. Add the cucumbers and onions to a large bowl.

  4. In a smaller bowl, add apple cider vinegar and honey and stir to dissolve honey.

  5. Add the Greek yogurt and whisk to combine.

  6. Add the yougurt mixture to the cucumbers and onion and mix well.

  7. Add fresh chives, dill, salt and pepper and stir.

  8. Cover and refrigerate at least an hour.

  9. Serve as a delicious side!

💡 Dr. Stephanie's Tip: Fresh herbs are one of the easiest ways to make healthy meals more flavorful without relying on excess salt or processed sauces. I almost always recommend keeping fresh dill, parsley, cilantro, or basil on hand—they're an easy way to boost both flavor and nutrition.

Healthy Eating Doesn't Have to Be Complicated

Some of the healthiest meals are also the simplest. This refreshing cucumber salad is proof that a handful of fresh ingredients can come together to create something that's delicious, satisfying, and perfect for sharing with family and friends.
