2 heads of organic broccoli, chopped into florets (stems removed)
2 cups organic shredded carrots
1 granny smith apple, cored and chopped
1/2 cup of chopped walnuts (or 1/4 cup roasted pumpkin seeds)
1 cup avocado oil mayonnaise
1/4 cup rice wine vinegar (or apple cider vinegar)
2 lemons, juiced
1 clove garlic, minced
1 tsp raw honey
1/2 tsp onion powder
1 tsp salt
1 tsp black pepper
Add the salad ingredients into a big bowl and stir to combine.
In a smaller bowl, add the dressing ingredients and whisk until smooth.
Pour the dressing into the salad and stir well to combine.
Refrigerate for 1 hour before serving.
