Why Cabbage Deserves More Attention

Cabbage is one of the most underrated vegetables in the grocery store.

Not only is it budget-friendly, but it's also packed with nutrients including:

  • Vitamin C

  • Vitamin K

  • Folate

  • Fiber

  • Antioxidants

From a functional medicine perspective, cruciferous vegetables like cabbage may also support healthy estrogen metabolism, making them a great addition to many women's diets.

Ingredients:

  • 1 pound lean ground beef or ground turkey

  • 1 small yellow onion, diced

  • 4 cups green cabbage, chopped

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 3 cloves garlic, minced

  • 1 (28-ounce) can crushed tomatoes

  • 6 cups beef or chicken broth

  • 1 cup cooked brown rice or cauliflower rice

  • 1 teaspoon dried oregano

  • 1 teaspoon dried basil

  • 1 teaspoon paprika

  • ½ teaspoon sea salt

  • ¼ teaspoon black pepper

Optional garnish:

  • Fresh parsley

  • Red pepper flakes

Directions:

  1. Brown the ground beef or turkey in a skillet and drain excess fat if needed.

  2. Add the cooked meat to your crockpot.

  3. Add cabbage, onion, carrots, celery, garlic, tomatoes, broth, and seasonings.

  4. Stir to combine.

  5. Cook on low for 6–8 hours or high for 3–4 hours.

  6. Stir in cooked rice during the final 30 minutes of cooking.

  7. Taste and adjust seasonings as desired.

  8. Garnish with fresh parsley before serving.

Serves 6–8.

A Meal Prep Favorite

One of my favorite things about soup is how easy it makes healthy eating during a busy week.

Make a large batch on Sunday and you'll have nourishing lunches or dinners ready to go for several days.

This soup also freezes beautifully, making it a great option for future busy nights when cooking is the last thing you want to do.

Ways to Customize It

This recipe is incredibly flexible.

Try adding:

  • Zucchini

  • Bell peppers

  • Mushrooms

  • Spinach

  • Kale

  • Cauliflower rice

  • Ground chicken

  • Ground bison

You can easily adjust the ingredients based on what you have available.

Simple Ingredients, Big Flavor

Some of the best recipes aren't complicated. They're made from simple ingredients that come together to create a meal that's comforting, satisfying, and nourishing.

This unstuffed cabbage roll soup is one of those recipes you'll find yourself making long after soup season is over.
