If you're looking for a healthy dinner that feels a little more special than plain chicken and vegetables, this Goat Cheese & Sun-Dried Tomato Chicken and Broccoli Bake is the perfect solution.
The creamy goat cheese melts into the chicken while the sun-dried tomatoes add a rich, savory flavor that transforms simple ingredients into a comforting and satisfying meal. Best of all, everything bakes together in one dish, making cleanup easy and weeknight cooking much less stressful.
This recipe is packed with protein, loaded with vegetables, and full of flavor without relying on processed ingredients or heavy sauces.

Why Protein Matters More Than Ever
One of the most common nutrition mistakes I see, especially in women over 40, is not eating enough protein throughout the day.
Protein plays an important role in maintaining muscle mass, supporting healthy metabolism, balancing blood sugar, and helping you stay full between meals. As estrogen levels begin to fluctuate during perimenopause and menopause, preserving muscle becomes even more important for long-term health and healthy aging.
Recipes like this make it easy to increase your protein intake without feeling like you're eating "diet food."
The Benefits of Broccoli
Broccoli is one of my favorite vegetables because it's rich in nutrients and incredibly versatile.
It provides fiber to support digestion, vitamin C for immune health, and antioxidants that help protect cells from oxidative stress. Broccoli also contains compounds that support the body's natural detoxification pathways, making it a wonderful addition to a balanced diet.
Pairing broccoli with protein and healthy fats creates a meal that is both nourishing and satisfying.
Why Goat Cheese?
Many people who don't tolerate cow's milk dairy well find that goat cheese is easier to digest. Goat cheese contains a different protein structure than many traditional dairy products and offers a creamy texture with a tangy flavor that pairs beautifully with chicken and vegetables.
Even a small amount adds richness and depth of flavor without overwhelming the dish.
Ingredients:
1 organic cooked rotisserie chicken, deboned & chopped
1 lb broccoli florets, finely chopped
1 TBSP avocado oil
1/2 TBSP Primal Palate Super Gyro seasoning (or Greek seasoning)
1/8 tsp onion powder
1/8 tsp garlic powder
2 oz. herbed goat cheese (or feta cheese)
4 sundried tomatoes, diced
1 lemon, juiced
Directions:
Preheat the oven to 450 degrees and line a baking sheet with parchment paper.
In a large bowl, toss broccoli in avocado oil, onion powder, garlic powder and Super Gyro seasoning.
Spread broccoli evenly on the sheet pan and top with chicken and an extra little sprinkle of seasoning.
Top evenly with goat cheese and sundried tomatoes.
Bake for 15 minutes and squeeze the lemon juice on top before serving.
Simple Ingredients, Incredible Flavor
One of my favorite things about this recipe is that it feels restaurant-worthy while using everyday ingredients.
The combination of tender chicken, roasted broccoli, creamy goat cheese, and sun-dried tomatoes creates a perfect balance of protein, vegetables, and flavor. It's proof that healthy meals don't need to be complicated or time-consuming.
Serving Suggestions
This dish can easily stand alone as a complete meal, but it also pairs well with:
Roasted sweet potatoes
Quinoa
Cauliflower rice
A simple mixed green salad
Garlic roasted vegetables
For meal prep, portion leftovers into containers for easy lunches throughout the week.
A Weeknight Dinner Worth Repeating
When a recipe is easy to make, nutrient-dense, and full of flavor, it tends to become a regular part of the dinner rotation. This Goat Cheese & Sun-Dried Tomato Chicken and Broccoli Bake checks all those boxes.
Whether you're cooking for yourself, your family, or preparing meals ahead for a busy week, this recipe delivers comfort, nutrition, and great flavor in every bite.
