Ingredients:
7-8 oz. wild-caught, peeled & deveined frozen shrimp, thawed
1/2 cup cooked quinoa (Good & Gather Garlic & Olive Oil Quinoa)
1 cup broccoli, chopped
1 lime, juiced
1/2 tsp seafood seasoning (Frontier Co-Op brand)
2 oz. avocado mash with sea salt & black pepper (Good Foods brand)
avocado oil spray
Directions:
Boil 3 cups of water in a sauce pan and add a steam basket. Put the broccoli in the steamer and cover with a lid, steaming for 5 minutes.
Spray a large frying pan with avocado oil spray over medium-high heat. Once hot, add the shrimp, sprinkle with seafood seasoning, and saute for 3-4 minutes until fully cooked. Add the cooked quinoa and the juice of half a lime. Cook for an additional minute.
Add the shrimp and quinoa to a bowl and top with the steamed broccoli and avocado mash.
Squeeze the other half of the lime over everything before serving.
