Zesty Lime Shrimp & Broccoli Quinoa Bowl

Ingredients:

  • 7-8 oz. wild-caught, peeled & deveined frozen shrimp, thawed

  • 1/2 cup cooked quinoa (Good & Gather Garlic & Olive Oil Quinoa)

  • 1 cup broccoli, chopped

  • 1 lime, juiced

  • 1/2 tsp seafood seasoning (Frontier Co-Op brand)

  • 2 oz. avocado mash with sea salt & black pepper (Good Foods brand)

  • avocado oil spray


Directions:

  1. Boil 3 cups of water in a sauce pan and add a steam basket. Put the broccoli in the steamer and cover with a lid, steaming for 5 minutes.

  2. Spray a large frying pan with avocado oil spray over medium-high heat. Once hot, add the shrimp, sprinkle with seafood seasoning, and saute for 3-4 minutes until fully cooked. Add the cooked quinoa and the juice of half a lime. Cook for an additional minute.

  3. Add the shrimp and quinoa to a bowl and top with the steamed broccoli and avocado mash.

  4. Squeeze the other half of the lime over everything before serving.

As a working mom of two kids with a full-time job in Dubai, I honestly don’t get much time to prepare different healthy meals every day between office work, school routines, and household responsibilities. That’s why I really like recipes like this, it looks simple, quick, and still very nutritious. I like that it doesn’t require too many ingredients or complicated steps. Definitely saving this to try on a busy weekday when I want to cook something healthy without spending too much time in the kitchen.
