Turkey Quinoa Bowl

I was about to make a turkey recipe today and realized I was missing a few ingredients, so I looked in my refrigerator and pantry and came up with this recipe instead, which turned out absolutely delicious! Just how many healthier fast food restaurants have their own customizable version of a "bowl", this recipe can be made the way you like it! You can swap out the quinoa for brown rice or cauliflower rice, you can add different veggies, and you can add whatever fresh herbs, seasonings, and toppings that you like. Here is how I made it:

Ingredients:

  • 1 lb Greenwise ground turkey

  • 2 TBSP diced red onion

  • 1 clove minced garlic

  • 1 tsp avocado oil

  • large handful of baby spinach

  • 2 cups diced cherry tomatoes

  • 1 cup cooked quinoa (I use Minute organic white & red ready-to-serve quinoa)

  • 1 tsp souvlaki seasoning (or any Greek seasoning)

  • 1/2 tsp himalayan salt

  • 1/8 tsp black pepper

  • 1/8 tsp onion powder

  • 1/8 tsp garlic powder

  • feta cheese (optional, for topping)

  • black olives (optional, for topping)

Directions:

In a large frying pan or wok, heat avocado oil over medium-high heat. Add garlic and red onion and stir fry for 1 minute. Add in ground turkey, souvlaki seasoning, onion powder, garlic powder, himalayan salt, and black pepper, and cook until the turkey is no longer pink. Add in diced tomatoes and baby spinach and stiry fry for 2 minutes until spinach is slightly wilted. Stir in quinoa and cook for another minute. Divide into 4 bowls. Top with feta cheese and black olives (optional).

This recipe makes 4 servings and is a quick and easy meal-prep recipe for lunch or dinner. It is also gluten-free!!
