Crispy Herb-Roasted Gold Potatoes

Sometimes the simplest side dishes are the ones I make over and over again. These Crispy Herb-Roasted Gold Potatoes are easy, flavorful, and go with just about anything.


Gold potatoes are seasoned with rosemary, thyme, garlic, onion, salt, and pepper, then roasted until they're golden and crispy on the outside and soft and creamy on the inside.


They're naturally gluten-free and dairy-free, require just a few ingredients, and are an easy way to add a satisfying carbohydrate to a balanced meal.


Why I Love Gold Potatoes


Gold potatoes are one of my favorites for roasting because they have a naturally creamy, almost buttery texture without needing butter.


Their skins are also thin enough that there's no peeling required. Just wash them, dry them well, cut them up, season, and roast.


Potatoes also provide carbohydrates, potassium, vitamin C, and other nutrients. I don't believe we need to be afraid of carbohydrates. I prefer pairing them with protein, vegetables, and healthy fats to create a balanced, satisfying meal.


Crispy Herb-Roasted Gold Potatoes

Serves 4


Ingredients:

  • 1½ lbs gold potatoes, cut into bite-sized pieces

  • Olive oil spray, approximately 1 tablespoon

  • 1 teaspoon dried rosemary

  • 1 teaspoon dried thyme

  • 1 teaspoon garlic powder

  • ½ teaspoon onion powder

  • ¾ teaspoon sea salt

  • ¼ teaspoon black pepper


Directions:

  1. Preheat the oven to 425°F.

  2. Wash the potatoes and dry them thoroughly. Cut them into evenly sized, bite-sized pieces so they cook at approximately the same rate.

  3. Place the potatoes on a large baking sheet and spray evenly with olive oil.

  4. Sprinkle with the rosemary, thyme, garlic powder, onion powder, salt, and black pepper. Toss well until the potatoes are evenly coated.

  5. Spread the potatoes back into a single layer, leaving a little space between the pieces. This helps them roast and brown rather than steam.

  6. Roast at 425°F for 45 minutes, tossing or flipping them about halfway through.

  7. The potatoes are ready when they're golden brown and crispy around the edges and easily pierced with a fork.

  8. Serve warm.


How to Get Your Roasted Potatoes Crispy


There are two things that make a big difference: dry potatoes and enough room on the pan.


After washing your potatoes, dry them really well before adding the olive oil and seasonings. Excess moisture can prevent them from getting those crispy edges.


You also don't want to overcrowd your baking sheet. If the potatoes are packed too tightly together, they'll steam instead of roast.


And don't skip flipping them halfway through. That's what helps you get those delicious browned edges on more than one side.


Do You Need to Peel Gold Potatoes?


No! That's another reason I love using gold potatoes.


Their skins are thin and tender, so I leave them on. It saves time and gives the finished potatoes a little more texture.


Just give them a good wash before cutting them.


What to Serve With Roasted Gold Potatoes


These potatoes are such an easy side dish because their simple herb seasoning works with so many different meals.


One of my favorite combinations is serving them with my Dijon Mustard Glazed Chicken Thighs. The crispy rosemary and thyme potatoes are so good with the tangy Dijon glaze. Add a green vegetable like broccoli, asparagus, or green beans, and you have a simple, balanced dinner.


They're also delicious with salmon and roasted asparagus, cod with sautéed zucchini, turkey burgers and a salad, grilled chicken and green beans, steak with Brussels sprouts, or meatloaf with roasted vegetables.


And don't forget about breakfast.


Reheat any leftover potatoes in the oven or air fryer and serve them as breakfast potatoes with eggs or your favorite breakfast protein.


A Chinese Medicine Perspective


From a Chinese medicine food-therapy perspective, potatoes are naturally sweet and are traditionally associated with the Spleen system and digestion.


They're also warm and cooked in this recipe, which is the type of preparation I often recommend for people who don't feel their best eating a lot of cold or raw foods.


When we talk about the Spleen in Chinese medicine, we're referring to a traditional functional system rather than simply the anatomical spleen.


But you don't have to think about every ingredient as medicine.


Sometimes a simple, warm, home-cooked side dish is exactly what you need.


Don't Be Afraid of the Carbs


Potatoes sometimes get a bad reputation because they're a higher-carbohydrate food, but carbohydrates aren't inherently unhealthy.


Your individual carbohydrate needs depend on your activity level, goals, appetite, and overall diet.


Instead of focusing on removing potatoes from your plate, think about what you're eating with them.


Pair these potatoes with a good source of protein, plenty of vegetables, and some healthy fat, and you've got the foundation for a balanced meal.


💡 Dr. Stephanie's Tip: Make a double batch.

These potatoes are perfect for meal prep and reheat really well. Store the leftovers in the refrigerator, then pop them in the air fryer or oven for a few minutes to bring back those crispy edges.


Having a healthy carbohydrate already prepared makes putting together quick meals during the week so much easier.
