I created this warm, comforting breakfast bowl as a high-protein, low-carb alternative to oatmeal. This porridge has a nutty and creamy taste and a crunchy, fruity topping. Hemp hearts (derived from the cannabis sativa plant) are a plant-based protein packed with nutrients and omega-3 fatty acids. Hemp hearts don't contain CBD or THC, so there are no psycho-active effects. This recipe is vegan, plant-based and full of healthy nutrients.
Ingredients:
1/4 cup hemp hearts
1 TBSP chia seeds
1/4 cup water
1/4 cup organic canned coconut milk
1/4 tsp organic vanilla
1/4 tsp cinnamon
1/4 cup frozen organic wild blueberries
pinch of sea salt
2 strawberries, diced
2 TBSP organic sprouted pumpkin seeds
Directions:
Place hemp hearts into a fine mesh strainer and rinse with water.
In a small bowl, add hemp hearts and chia seeds. Stir in 1/4 cup water and cover with plastic wrap. Let soak overnight.
Add hemp hearts and chia seeds to a small pot over medium-high heat.
Stir in coconut cream, vanilla, cinnamon, and blueberries.
Cook porridge for about 5 minutes until bubbly and thickened.
Pour into a bowl and sprinkle with a pinch of sea salt, pumpkin seeds, and sliced strawberry.
