Goat Cheese & Herb Courgettes

Courgettes (zucchini/summer squash), are one of my favorite low-calorie and low-carb vegetables. In this recipe, we jazz up these veggies with lots of fresh flavor! This recipe is an excellent side dish to pair with your favorite protein, especially chicken or fish. The flavorful combination of fresh mint, lemon juice, chili pepper and goat cheese is out of this world! If you are dairy-free, simply omit the goat cheese.

Ingredients:

  • 1 organic zucchini, diced

  • 1 organic summer squash, diced

  • 1/4 tsp sea salt

  • 1 lemon, juiced

  • pinch of crushed red pepper flakes

  • 3 TBSP herbed goat cheese

  • 2 TBSP fresh mint, finely chopped

  • avocado oil spray


Directions:

  1. Place the chopped zucchini and squash in a bowl, sprinkle with sea salt and mix well. Let it sit for 15-20 minutes and then pat well with paper towels to absorb excess moisture.

  2. Spray avocado oil spray in large pan or wok over medium-high heat.

  3. Add zucchini and squash and stir fry until it starts to slightly brown.

  4. Add in garlic and saute for 1 minute.

  5. Remove from pan and top with fresh lemon, mint, crumbled goat cheese and crushed red pepper flakes.
