Many of my patients who have food allergies or sensitivities to gluten, wheat, dairy, and eggs, especially have a hard time figuring out what to eat for breakfast. Additionally, patients trying to lose weight often struggle with finding something for breakfast that satisfies their carb and sugar cravings. 2 TBSP unsweetened coconut flakes
2 TBSP finely chopped walnuts or pecans
1 TBSP flaxseed meal
1 TBSP almond flour
1/2 TBSP chia seeds
1/2 cup almond milk (or any dairy-free milk)
1/8 tsp pumpkin pie spice (or ground cinnamon)
dash of organic vanilla extract
pinch of himalayan salt
1 tsp honey
Combine coconut flakes, walnuts, flaxseed meal, almond flour, chia seeds, himalayan salt, and pumpkin pie spice in a small bowl and mix.
Heat almond milk until bubbling. Stir in the dry ingredients and add a dash of vanilla extract and honey. This recipe makes one serving.
Add a few blueberries, raspberries or strawberries and top with 1 TBSP of no-sugar added cashew or almond butter.
Tip: Combine all the dry ingredients ahead of time and place in a bag or container so all you have to do is heat up the coconut milk and stir. This makes for a hassle-free, speedy and healthy breakfast!!
