Hearts of Palm Pasta Puttanesca

This recipe is super quick and super delicious!! You will feel like you are eating a fancy Italian dish all without the heavy carbs and bloated feeling, prepared in only ten minutes! Sardines are protein-packed, high in heart-healthy omega 3's, selenium and vitamin D, and are a perfect addition to the puttanesca sauce without any fishy taste. This dish is gluten-free, pescatarian, and paleo-friendly.



Ingredients:

  • 2 4.37 oz. wild-caught boneless, skinless sardines in water, drained and chopped

  • 3 TBSP extra virgin olive oil

  • 4 cloves garlic, minced

  • pinch of crushed red pepper flakes

  • 1/4 cup kalamata olives, chopped

  • 3 TBSP capers, drained

  • 1 cup San Marzano whole peeled tomatoes, hand crushed

  • 1 12 oz. pouch Palmini hearts of palm angel hair, rinsed and drained


Directions:

  1. Heat a large saute pan over medium heat and add olive oil.

  2. Add garlic, crushed red pepper flakes, and sardines and saute for 5 minutes.

  3. Stir in olives and capers.

  4. Add crushed tomatoes and heat until simmering.

  5. Stir in Palmini angel hair and cook for additional 2 minutes and serve.
