The Benefits of Watermelon


Watermelon is made up of more than 90% water, making it one of the most hydrating fruits you can enjoy during the summer months.


It's also naturally rich in vitamin C, vitamin A, potassium, and the antioxidant lycopene, which gives watermelon its vibrant red color. Lycopene has been studied for its role in supporting heart health and helping protect cells from oxidative stress. Watermelon also contains the amino acid citrulline, which may support healthy circulation.


A Chinese Medicine Perspective


In traditional Chinese medicine, watermelon is considered a cooling food. During the hot summer months, it's often enjoyed to help clear excess heat, promote hydration, and satisfy thirst.


Because of its cooling nature, I generally recommend enjoying watermelon in moderation if you tend to feel cold easily, have sluggish digestion, or experience symptoms of Spleen Qi deficiency. Pairing it with warming foods at other meals can help maintain balance while still enjoying this delicious seasonal fruit.


Fresh Ingredients Make All the Difference


The beauty of this recipe is its simplicity.


The sweeter the watermelon and the fresher the herbs, the better the finished salad will taste. If your recipe includes ingredients like fresh mint, basil, cucumber, feta, or a squeeze of lime, they add brightness and balance without overpowering the natural sweetness of the watermelon.


Whenever possible, choose ripe, in-season watermelon for the best flavor and texture.


Ingredients:

  • 2 1/2 pounds of seedless watermelon, chopped

  • 2 ripe avocados, chopped

  • 2 limes, juiced

  • 2 TBSP organic olive oil

  • 2 TBSP balsamic vinegar (or red wine vinegar)

  • 1/4 cup fresh chopped mint

  • 1/4 cup feta cheese (optional, omit if dairy-free)

  • sea salt, to taste


Directions:

  1. Place chopped watermelon and avocados into a large bowl.

  2. Juice two limes over the watermelon and avocados and stir gently to combine.

  3. Drizzle olive oil and vinegar and stir in.

  4. Add salt to taste.

  5. Refrigerate for 30 minutes.

  6. Add feta cheese and fresh mint and serve!


💡 Dr. Stephanie's Tip: One of my favorite ways to build a healthier plate is to take advantage of seasonal produce. Fruits and vegetables that are in season are often at their peak flavor, more affordable, and make healthy eating feel effortless.
