Summer Strawberry Salad

Who doesn't love stawberries in the summer?! Strawberries are a great source of vitamin C, manganese, folate, potassium, and antioxidants. This wonderful berry is beneficial for lowering cholesterol and blood pressure, controlling blood sugar, and preventing diabetes, heart disease, and cancer. Strawberries are low-glycemic and low in carbs. They also contain 91% water and 2g of fiber per 3.5 oz. serving.

This summery salad is a delicious blend of sweet, savory, and tangy, with greens from organic spinach, and added protein from turkey and a little cheese! This recipe is one of my favorites to make as a quick and yummy lunch and can be meal prepped the day before to grab and go! The recipe below makes one serving.


Ingredients:

  • 2 handfuls of organic baby spinach

  • 3 slices of Applegate farms organic smoked turkey breast, chopped

  • 3 organic strawberries, sliced

  • 2 TBSP organic feta cheese, goat cheese (or Violife vegan dairy-free feta)

  • 1/2 tsp sesame seeds

  • 2 TBSP Primal Kitchen balsamic vinaigrette dressing

Directions:

Add all ingredients into a salad bowl and toss. That's it!!
