Broccoli Cheese Scrambled Eggs

Looking to add more vegetables to your diet? One effective and delicious way I do that is by creatively incorporating vegetables into my morning egg breakfast. For instance, I often include broccoli, which not only adds a vibrant color to the dish but also packs a nutritional punch. Broccoli is rich in essential vitamins and minerals, particularly vitamin C and vitamin K, and is also a great source of dietary fiber. To prepare this, I typically sauté the broccoli lightly before mixing it into my scrambled eggs or omelet. This method not only enhances the flavor profile of the eggs but also ensures that I start my day with a healthy dose of greens.
Additionally, to round out this wholesome breakfast, I like to add a piece of fruit, such as an apple or a banana. These fruits provide a healthy carbohydrate source that fuels my body and keeps my energy levels stable throughout the morning. Apples, with their crisp texture and sweet-tart flavor, are high in fiber and antioxidants, which contribute to overall health and can aid in digestion. On the other hand, bananas are an excellent source of potassium and provide quick energy, making them a perfect complement to my egg and vegetable breakfast. By combining these elements, I create a balanced meal that not only satisfies my hunger but also supports my nutritional goals for the day.

Ingredients:
1 pasture-raised egg
1/2 cup organic egg whites
1 cup broccoli, chopped
1 slice organic American cheese, diced
1/2 tsp Paleo Valley Rosemary Garlic seasoning (or seasoning of your choice)
1 apple, cored and sliced
2 TBSP sauerkraut
avocado oil spray
Directions:
Heat a frying pan over medium-high heat and spray with avocado oil spray. Add broccoli and saute for a few minutes.
Add whole egg, egg whites and seasoning in the pan and cook until eggs are solid.
Fold in the American cheese and cook until slightly melted.
Serve with a side of sauerkraut and your favorite fruit.
