Creamy coconut milk, fresh lime, and savory coconut aminos come together to create a simple marinade that transforms ordinary chicken into a delicious, restaurant-worthy meal. The best part? You can prepare the marinade the night before, let the chicken soak up all of the flavor, and have dinner ready in minutes the next day.


This recipe is naturally gluten-free, dairy-free, and Paleo-friendly, making it a wonderful option for busy weeknights or meal prep.

Ingredients:

  • 8-10 chicken tenderloins

  • 1 can organic full-fat coconut milk

  • 3 limes

  • 3 TBSP coconut aminos

  • 1 TBSP + 1 tsp fish sauce

  • 1 tsp dried sweet basil or thai basil

  • 1/4 tsp dried ginger


Directions:

  1. In a medium bowl, combine the coconut milk, the zest of 1 lime, and ¼ cup fresh lime juice. Add the coconut aminos, fish sauce, basil, and ginger, then whisk until well combined.

  2. Place the chicken in a zip-top bag or glass container. Pour the marinade over the chicken and refrigerate for 24 hours for the best flavor.

  3. Remove the chicken from the marinade and cook over medium heat in a large skillet for 10–15 minutes, turning occasionally until cooked through.

  4. Reduce the heat to low and simmer the remaining marinade for approximately 2 minutes before serving over the chicken.


💡 Dr. Stephanie's Tip: One of my favorite meal-prep strategies is marinating protein the night before. It not only saves time on busy evenings but also allows the flavors to fully develop, making even simple recipes taste like you've spent hours in the kitchen.
