Ingredients:

  • 2 ripe avocados

  • 1 bag of frozen shrimp, thawed, deveined, with tails removed, torn into thirds

  • 1 ripe mango, peeled and diced

  • 3 limes

  • 1/4 tsp cumin powder

  • 1/2 cup coconut cream

  • 1 small jalepeno pepper, chopped with seeds removed

  • fresh cilantro

  • fresh mint

  • 1 TBSP extra virgin olive oil

  • sea salt, to taste

  • black pepper, to taste


Directions:

  1. Scoop out the insides of 2 avocados and put in a blender.

  2. Add in the coconut cream, juice of one lime, 1/4 tsp of cumin and a dash of sea salt and pepper. Blend until smooth.

  3. Add the avocado whip to a bowl.

  4. To make the salsa, combine the shrimp, mango, cilantro, mint, and jalepeno pepper.

  5. Squeeze the juice of 2 limes over all the ingredients and drizzle 1 TBSP of extra virgin olive oil.

  6. Finish with salt and pepper and mix to combine.

  7. Top the avocado whip with the mango shrimp salsa and serve.
