Tired of boring old grilled chicken? You are going to LOVE this recipe! This marinade will give great flavor to your chicken and pairs perfectly with cauliflower rice and your favorite vegetables. This recipe is a great idea to make ahead of time for a quick lunch during the week or for a summer cookout with your friends and family.
2 lbs boneless, skinless chicken breast or tenders
1 16 oz. gluten-free beer (or 1 1/2 cups)
6 TBSP fresh lemon juice (about 1 1/2 lemons)
2 TBSP organic olive oil
2 TBSP Italian seasoning
1/2 tsp cayenne pepper
1 tsp Himalayan salt
1 tsp black pepper
Directions: Mix all ingredients together in a bowl and whisk to combine.
Place chicken in a shallow dish and pour marinade over top.
Refrigerate for 4 hours or overnight for the best flavor. Take chicken out of marinade and grill in a pan about 12-15 minutes until done, or use a George Foreman and cook for 5 minutes.
