Ingredients:

  • 1 shallot, minced

  • 1 orange bell pepper, diced

  • 6 cups chopped kale

  • 3/4 cup organic canned corn, drained

  • 1 TBSP coconut oil

  • 1 lemon, juiced

  • 2 TBSP Bragg's apple cider vinegar

  • 1 tsp himalayan salt

  • pinch of black pepper

Directions:

Heat coconut oil in a large saute pan or wok until melted. Add in shallots and bell pepper and saute for 3 minutes. Add in corn and cook while stirring for an additional minute. Massage the kale and then add to the pan, cooking for about 3 minutes until wilted. Add in salt, pepper lemon juice, and apple cider vinegar. Stir well and serve.
