I love making tuna for lunch because it is quick and easy, but it can definitely get boring. In this recipe, I jazz up some wild-caught yelowfin tuna with Italian flavors, roasted red peppers and artichokes to make it absolutely delish!! This recipe doesn't require any cooking and it can be made in only 5 minutes. You can make this recipe ahead of time and refrigerate for a quick grab-and-go, healthy, high-protein lunch. You can also add a crunch by spooning the tuna salad into romaine lettuce leaves and eating it like a taco. This recipe makes 1 serving.
Ingredients:
3 oz. tuna (I recommend this one.)
1 roasted red pepper, chopped
1/4 cup artichoke hearts
1 TBSP avocado oil mayonnaise
2 tsp red wine vinegar
1/8 tsp dried oregano
1/8 tsp dried basil
dash of garlic powder
dash of onion powder
sprinkle of himalayan salt
sprinkle of black pepper
Directions:
Drain the tuna and add to a bowl. Chop the artichoke hearts and roasted red pepper and add to the tuna. Add the remaining ingredients and stir well to combine. Now it's time to eat!
