Simply Shredded Salsa Chicken

After being in quarantine, who doesn't want a break from cooking? Or cooking just might not be your thing, you don't have time or patience for it, or you always seem to mess it up... When it comes to cooking, I love simple. This recipe wins all the awards for simplicity because it has only TWO ingredients, it does the cooking for you, it is essentially fool-proof, and it is incredibly tasty (and healthy)!!
8 oz. organic chicken breast (1 chicken breast)
16 oz. organic salsa
Mashed avocado (fresh or pre-made single servings)
1) Add chicken breast and salsa into your crock pot or instant pot. Set on low for 8 hours and close the lid (and valve if using an instant pot). I like to start this recipe before bedtime so it is ready when I wake up!
2) Once the timer beeps, open the lid and shred chicken with 2 forks. That's it!!!
The salsa in this recipe gives the chicken lots of flavor without the need for any additional seasonings. The chicken stays moist and delicious when cooked slowly using this method. I like to eat my salsa chicken warm with mashed avocado on top. You can add your favorite vegetable side dish to make a complete meal. You can also add this chicken to a salad or put it in tortillas to make tasty tacos!
