Easy Chick-Avo-Kale (Chicken, Avocado & Kale)

This is an easy 5-minute recipe that I came up with (along with the name) and have made over and over because it is simple, highly nutritious, super delicious, gluten-free, grain-free, dairy-free and paleo!! In one bowl, you get a super balanced blend of protein, green vegetables and healthy fats! Make this recipe for a quick lunch or dinner! (If you want to make this recipe even easier, buy the "fajita" chicken strips that are already seasoned and skip out on the seasonings listed below.)

Ingredients:

  • Applegate naturals grilled chicken breast strips (3 oz or 1/2 package)

  • Avocado mash (1 individual serving)

  • 1 bag of organic chopped kale (2 handfuls)

  • Avocado oil spray

  • 1 lemon or lime, juiced

  • 1/8 tsp chili powder

  • 1/8 tsp coriander powder

  • 1/8 tsp onion powder, 1/8 tsp

  • 1/8 tsp garlic powder

  • Himalayan salt (lightly sprinkled)

  • Black Pepper (lightly sprinkled)

Directions:

Heat a skillet over medium-high heat, spray avocado oil to coat the pan and add chicken strips. Add chili powder, coriander, onion powder, garlic powder, himalayan salt, and black pepper. Stir fry for 4 minutes. Add 2 handfuls of chopped kale and stir fry for another minute until kale is slightly wilted. Stir lemon juice into the chicken and kale. Serve in a bowl. Add avocado mash on top and mix to combine. Dig in!!
